Chandra's "Italian Vegetable Medly"

So Chandra is on spring break right now - she's doing the cooking this week.  Score!  Downside - work's been hella hectic.  Result - I havn't been too active on this blog (sorry).   

This is what she made tonight and I call it marinated salad, she calls it her "Italian Vegetable Medly" because it needed a nicer name. 

It's pretty easy to make - just chop the veggies toss a sauce on, let it sit for a bit and eat with a side of meat (we had wild salmon)

Veggies:
Red Onions
Cauliflower
Carrot
Broccoli
Celery
Tomatos
Red Pepper

Sauce:
Balsamic vinegar, olive oil, Italian seasoning, garlic powder, and onion powder. 

Directions:
Chop veggies - mix with sauce.  Cover & chill for couple hours before serving. 

Pretty simple but it's a nice summery side dish.

Workouts:
Sunday - Walk + Frisbee
Monday - Off - Wounded my finger making Green goddess pudding.
Tuesday - 8 km run, last 4 km complete with sprints and leapfrog (Chandra rode her bike with me)
Wednesday - walk
Thursday (Yea I'm putting it in here) - 3 hours of moshing @ thaw at the shaw.

On a complete aside Sunday I went and got my blood pressure checked while Chandra and I were out doing our errands.  You know those stupid little booths @ the pharmacy?  I stop by them every couple weeks b/c I do have high blood pressure (or have had?)  Normally I'm around 139/80.  My blood pressure came in at 122/80.  I'll keep getting it checked in the coming months and let you know how that keeps panning out.
