A Yam Salad!

Happy holidays!  I feel pretty safe saying that, since not everyone celebrates Easter (me included) but gets the weekend off.  Awesome.  There is nothing better than spending it with friends, or checking in on a good rock show.  And it was pretty good at that. 



So I felt I'd use the opportunity of company get a little creative in the kitchen - as if I really need an excuse.  I made a yam salad (like a potato salad but much better).  The cauliflower rice and steak are pretty easy to take care of yourself. 

The Yam Salad Ingredients:
2 large ish Cooked Yams cubed
6 Hard Boiled Eggs sliced
1 small red onion chopped finely
5 or 6 Stalks of Celery chopped finely
1/2 lb nice bacon cooked & Chopped finely

The Sauce is the deliciously magical part:
1 cup plain thick yogurt (I used my standard olympic one)
1/2 tsp dijon mustard
1-2 tsp ancho chille powder (Start with one and adjust up for taste)
garlic & onion powder to taste
2 tsp chilli sauce

Mix it all the ingredients together in a bowl, and add the sauce.  Its a bit lighter than a regular potato salad - so make a bit more if you want a creamier salad.  I think I really like it, and my friends and wifey enjoyed it too (at least that's what they said).
