I work onsite, but I've recently taken to leaving for lunchtime because you can only hear so many... Well, construction workers can get pretty crude let me just leave it at that.  Plus, I'm lucky enough to be closeish to home.  With my drive to and from the site, I have about 20 minutes to make my meal and enjoy it during my lunchtime (I'd say that its worth the effort for keeping my sanity.)

Here is a quick lunchtime meal.



Its a 3 egg scramble with onions, red pepper, mushrooms, a sprinkle of feta and 2 carrots chopped up on the side.  My guess is that its around 500 calories, but I really don't count 'em...

1 tbsp butter
1/2 red pepper, chopped
1/4 onion, chopped finely
2-3 mushrooms sliced
3 eggs
1 tbsp feta
2 carrots

Heat a non stick pan and melt the butter.  Get it warm, but not smoking.  Add the veggies, and fry them till sweaty.  If you don't like your veggies firm, carmelize them.  I won't hold it against you, just wait to add the mushrooms or they'll get rubbery.  Whisk your eggs a bit and add them to the pan.  Cook till not runny, and sprinkle with a bit of feta.  Chop up the carrot and eat.  Thats it.

Takes about 5 min if you're on your game.  7 if you're a little slow.

Its a lot of food, pretty tasty and quick.
