It is a sad sad day... Desert is in order.

So, I wanted to get into rugby this year.  There is nothing more blood pumping than having the ball and crashing full tilt into the unexpected backs, mauling, rucking, breaking through the pack, holding that ball, or sprinting down the field to beat everyone else to the ball. 
Except for maybe the price...  The registration for a season is $400 and a minimum fundraising committment.  Pre-university, I played 3 seasons in the exact same league for only $100. 

It averages out that I'd be paying $30-40 per game.  That's a no go. 

To make me feel a bit better cheesecake is in order I think.  This was totally an experiment that worked in my favor.  I'm good at a traditional newyork style cheese cake - this was a bit trickier.  This cake is also small - that's a 5-6" pan.  (Hahaha reminding me of a joke - Why is the Metric system better than the Imperial?  Because 150 mm sounds much larger than 6")

Ingredients:

Crust:
-3/4 cup unsweetened coconut flesh, pulverized in blender (I used my Magic Bullet)
-1 egg white
-1 tbsp melted butter

Innards
-1/2 cup softish cream cheese.  I used Olympic organic cream cheese, which has a pretty solid flavour. 
-2 egg yolks
-bit of vanilla
-2 tsp of honey
-2 tbsp heavy cream

Directions:

1.)Preheat oven to 425 F
2.)Line sides & bottom of pan with parchment paper.  Mix your crust and innards in seperate bowls.  The crust should be packable, but not gummy - if it is too wet, add more coconut, otherwise add a bit of butter.    Don't add the honey to the innards just yet. 
3.)Pack in the crust, but do not bake it.  On an normal cheese cake you would, this will burn with the fury of 1000 firey burning suns, and then ruin your cake. 
4.) Pour in the innards and drizzle the top with the honey.  2 Tsp is a guess - just make it however sweet you want. 
5.) Bake for like 10 min  or until the top browns a bit.  Turn down to 225 F and bake for like 45 min - 1 hour until the tooth pick comes out clean. 
6.) Cool overnight(or until completely cooled) If you don't it will taste a bit eggy and won't feel as dense.  Promise you. 


Serve the cake in quarters (or reasonably sized pieces if you choose to upsize it) topped with muddled fruit (lightly crushed) and nuts of choice. 
This was the first piece.  My second was served with 1/2 bananna and some crushed walnuts.  Chandra ate hers with raspberries.

Workouts:
Wednesday - Off
Thursday - 4 Sets of Squats carrying Chandra, approx 30 pullups, 60 pushups (tiger, incline, wideset), Plank&side Planks each side to fatigue, tabata sprints on elliptical max resistance. 
Fiday - Off
