Some Quick Salad Ideas

This was a lunch a little while back - just havn't gotten around to posting it.  These kinds of meals are my favorite because they're so quick to make.  I usually make my dressings 3 parts oil to 1 or 2 parts sour (Depending on your preference)




Jumbo Tiger Shrimp Salad with Coconut lime dressing:
Spinach & Iceberg Lettuce
Some Sauteed Shrimp (or cooked from deli if you prefer)
Raisins
Shredded unsweetened coconut
Button Mushrooms
Avacado
Snap peas
Yellow pepper

Dressing:
Coconut cream
Mild Curry Powder
Lime Juice
Crushed Chille Sauce

Egg + Nut Salad (I promise you its awesome):
Crushed walnuts
Egg
Avacado
Shredded Carrot
Sprinkling of Feta
There is red pepper in there, although you can't see it

Dressing:
Balsamic vinegar, Extra Virgin olive oil, and oregano

This one is shown with Chocolate Salty Balls (not really, they're just chocolate but good) and a small orange. 

Small Side Salad with Sprouts:
Iceberg lettuce
clover spouts
broccoli sprouts
grape tomatos
snap peas
pinch of feta

Dressing:
Balsamic and Extra Virgin Olive Oil


Quick Vegetarian Lunch Salad:
Mixed Greens salad (radichio, romaine, spinach, cilantro)
Tomato, sliced
Cucumber
Broccoli Sprouts
Red Pepper
Feta

Dressing:
Balsamic, Italian seasoning, Extra Virgin Olive Oil

Served with Cored Apple + Nut butter (Peanut in this picture, usually Almond)


Tuna Salad with Lime Dressing:
Flaked Tuna
Orange Pepper
Clover Sprouts
Mixed Greens Salad
Broccoli Sprouts
Snap Peas
Shredded unsweetened Coconut

Dressing:
Lime and Extra Virgin Olive Oil




Other good Dressings used:
1.) Soya Sauce, Red Wine Vinegar, onion powder, sesame seeds, Extra Virgin Olive Oil, small dash of sesame oil
2.) Roasted Garlic, Balsamic, Italian Seasoning, Extra Virgin Olive Oil
3.) Cayenne, Ancho Chille Powder (smoked kind), EVOO, Red Wine
