I was asked to put up the recipe for this yesterday, so I figured I should get this up here.
The recipe is always kind of put together by smell when I make it but I'll list some quantities that feel right. You might need to calibrate the spices a bit to get the right smell for you. Save on foods has McCormick Garam Masala that smells right - you can also make your own (although I've never ventured this way). Rice & Spice down on the south end here probably has something good that will work too.
2-3 Chicken Breasts
Couple tablespoons Butter for frying
1/2 large white Onion
3-4 cloves garlic
1/2 tsp Garam Masala
2 tsp Curry
1/2 tsp Ginger
1/2 tsp Cardamon
1/4 tsp Tumeric
1/4 tsp Coriander
1/4 tsp Cayenne
1 tsp Chille Flakes
1 small can of tomato paste
1/3 can Coconut Milk (use the Cocnut Cream if it's seperated well)
1/3 cup Plain Yogurt
Directions:
1.) Chop the chicken and fry it in the butter.
2.) Add the spices, garlic and onion. Mix it all together. This is my favorite part aside from eating it. You should have the most vibrantly yellow coloured meat you'll ever see at this point. Adjust the spice mix here. You should be able to smell it. Be wary of the cayenne/chille flakes though, they'll not add kick till after the sauce has sat for a bit. Let it fry for a bit.
3.) Add the can of tomato paste
4.) Add the coconut milk. Add a bit more if you're sauce isn't the right consistency (It should blend to a nice red/orange colour and should be near the final sauce consistency - if not add more coconut milk).
5.) Turn down the heat, cover and let simmer for a while - say like 30-45 minutes. This will let all the flavours blend and the onions cook a bit more.
6.) About 5-10 minutes before serving stir in the plain yogurt - it should go to the nice orange colour but look grainy. Heat it through and it should get smoother.
Serve over a bed of cauliflower rice (Food processor, cauliflower, covered in microwave with a spritz of lime juice for 3-5 min)and enjoy!
We made Green Goddess Pudding for desert. Everyone on Chandra's facebook said it sounded gross- but it's EPIC. I used honey instead of that sweetner listened. Go make it now! It's pretty unbelievable.
