Chandra's "Italian Vegetable Medly"

So Chandra is on spring break right now - she's doing the cooking this week.  Score!  Downside - work's been hella hectic.  Result - I havn't been too active on this blog (sorry).   

This is what she made tonight and I call it marinated salad, she calls it her "Italian Vegetable Medly" because it needed a nicer name.

This was a lunch a little while back - just havn't gotten around to posting it.  These kinds of meals are my favorite because they're so quick to make.  I usually make my dressings 3 parts oil to 1 or 2 parts sour (Depending on your preference)

It is a sad sad day... Desert is in order.

So, I wanted to get into rugby this year.  There is nothing more blood pumping than having the ball and crashing full tilt into the unexpected backs, mauling, rucking, breaking through the pack, holding that ball, or sprinting down the field to beat everyone else to the ball.

Paleo Results so Far

First things first, I have to say, the Paleo diet wasn't really my idea.  Not. At. All. 

Cauliflower rice, Bombay chicken, Steamed Broccoli

This was dinner on Monday night (for the record, I'm trying to prep a couple days in advance, so there is a bit of lag, it just helps me keep on top of my schedule, plus I'm not precisely the most well spoken individual so some of these take me some time.)

Yogurt is one vice I really can't give up...

No seriously,  it's true.  The thought of a day without yogurt is like a day without breathing.  Okay, maybe not that bad, but it would be really out of order.

Grilled Artichoke, Grilled Turkey and Squash/Carrot Soup

It looks pretty stellar, and it was.  The only issue was the turkey was a titch tough.  Next time it should probably be cooked on low heat in the oven first for about an hour and a half (Say 300 F) to help out a bit.

What's more fun than swinging a sledgehammer with wild abandon?

I don't know - but if you find out you should let me know so I can work it into a fitness session. :D

So here is what you need:
-The end of the road, with which you can place two markers (Point A and B)
-One vehicle with hitch or other spot for you to attach a rope to for pulling.
-12 ft of heavy duty rope.  I'd say your max tensile strength should = 50% of your GVW at a minimum.  I used a 3/4 " rope from Home Hardware because it was easy to hold/grip, approx $1.50/ft.  I'll find more uses for my rope to make it worthwhile.
-One sledge hammer.  You can get them in 6 lb to 16 lb I think.  I used a 10 lb bugger.
-Junk tire(s).  Should be heavy enough for you to impact with a sledgehammer and not buckle but light enough to throw.  You may have to bring two if you can't throw your impact pad.  Also, they're really tough to find, apparently it's a "safety concern" to give away scrap tires.  Pft, whatever.  I found a place that was more than happy to get rid of them.  If you're looking for them and can't find, send me an email and I'll direct you to a place in Edmonton.

So I get asked alot what I do for a living, and I always seem to have a hard time explaining a large portion of what I do.  I suppose that has to do with the fact that it wasn't explained to me very well.

I work onsite, but I've recently taken to leaving for lunchtime because you can only hear so many... Well, construction workers can get pretty crude let me just leave it at that.  Plus, I'm lucky enough to be closeish to home.  With my drive to and from the site, I have about 20 minutes to make my meal and enjoy it during my lunchtime (I'd say that its worth the effort for keeping my sanity.)

Oh get stuffed...

For the record, this was probably the first red meat I've eaten in, oh say, 2 years.  Red meat + my kidneys don't always get along, so I have avoided it for the most part.  This was organic ground beef (From a farm near Rocky Mountain House) that I bought in Save on foods.  It was expensive so I made 3 meals out of it.

An Eggcellent day

Sorry about the cheesy title, it just made me giggle.  I have NEVER successfully made an omelette.  Not Ever.  I thought there was something wrong with that so I had to fix it.  The pan really is everything.  You want a good, non stick/highly polished pan that delivers even heat & has sloped sides.  I got lucky, Homesense had a 50% off sale so I got this one for $30 JUST before I made MY VERY FIRST OMELETTE.
